A ‘Peach’ of a recipe: “It is called creamed fish…use buckwheat cakes and gravy, of course, generously.”

TLS, one page, 7.25 x 10.5, personal letterhead, August 4, 1949. Cobb sends along a recipe for creamed fish, one of his favorite recipes. In part, “This one happens to have been in our family for many years…It will work even with salmon, canned or otherwise. It is called creamed fish. A fresh fish is to be rolled in corn meal, fried in fat to a brown; then placed in casserole, adding any leftover sour cream or can even use milk with butter added. Should have added all contents where fish has been fried…then cover the fish with cream or enriched milk…Place in oven close to top heat and brown. Then important, use buckwheat cakes and gravy, of course, generously. I have explained this very lamely, but you can put it in better form.” Accompanied by the original mailing envelope.
